Edible silver leaf, honestly explained

Edible silver leaf — varak, also spelled varakh, waraq or warq, and called chandi ka varak in Hindi — is pure silver beaten until it is thinner than a human hair. At 0.02 microns it is thin enough to be translucent, and light enough that a draught will lift it off the booklet it comes in.

It has no taste and no nutritional content. It is used because it catches light the way nothing else on a barfi does, and because in India it has meant celebration and ceremony for centuries.

Pure silver is biologically inert. It is not absorbed, not metabolised and not stored — it passes straight through. That is why it is permitted as a food decoration rather than treated as an additive.

The safety question is really a purity question. Leaf cut with aluminium, nickel or lead is genuinely unsafe, and it exists because the metals are cheap and the difference is invisible on a sweet. This is the single reason to care where your varak comes from.

This surprises people, including people who have eaten it their whole lives. Traditional varakh is made by placing silver between layers of animal gut or leather and hammering it for hours. The pouch has to be thin, strong and elastic, and for centuries nothing else was.

The silver stays pure. The process does not. Leaf made this way is not vegetarian, and no label is required to say so.

Machine-made varakh replaces the animal pouch with polymer sheets in a sealed, dust-free room. Nothing animal touches the metal at any point. All of ours is made this way — which is what “100% vegetarian” on our boxes actually refers to.

Three tests, none of which need equipment:

• Rub it. Pure silver vanishes into a fine smudge. Adulterated leaf rolls into a small grey ball you can feel.
• Burn it. Pure silver leaves a small white bead. Aluminium leaves dark ash.
• Check the price. Silver leaf sold far below the metal price is not silver. The arithmetic is not subtle.

Is edible silver leaf safe to eat?

Yes. Pure silver is biologically inert: it passes through the body without being absorbed or metabolised, which is why it is permitted as a food decoration. Safety depends entirely on purity — leaf that has been adulterated with aluminium or other base metals is not safe, and is the reason to buy from a manufacturer who will state the purity.

Is silver vark vegetarian?

It depends on how it was made. Traditional varakh was beaten between layers of animal gut or leather, which makes the finished leaf non-vegetarian even though the silver itself is not. Machine-made varakh, beaten between polymer sheets in a dust-free room, involves no animal material at any stage. All Silver Vark leaf is machine-made and 100% vegetarian.

What purity should edible silver leaf be?

Food-grade silver leaf should be at least 99.9% pure silver. Ours is 99.99%. Below that, the balance is made up of other metals, and the whole safety argument for eating it stops holding.

How can I tell real silver vark from adulterated leaf?

Rub a sheet between your fingers: pure silver disappears into a fine smudge with no residue. Adulterated leaf rolls into a small grey ball. Burnt pure silver leaves a white bead; aluminium leaves a dark ash. Price is the other tell — silver leaf sold well below the metal price is not silver.

How long does edible silver leaf keep?

Kept in its booklet, away from damp and direct sunlight, silver leaf keeps its quality for about 12 months. It does not spoil in the way food does, but it will tarnish and tear more easily as it ages.
